The Heritage of the South: Nods to the roots of Jerez and Cádiz are present in every course. From the masterful use of fortified wines (amontillado and fino) in the sauces, to rich broths that evoke traditional stews reinterpreted with contemporary finesse.

The Sea as Protagonist: The menu pays homage to the highest quality seafood. Expect to find the silkiness of red prawns, the power of almadraba bluefin tuna, or the delicacy of rockfish, always cooked to perfection.
